Jim PeytonNot everyone has either the time or inclination to prepare lengthy recipes, at least not on a regular basis. In order to permit busy people to enjoy delicious Mexican food on a tight schedule, I have added a section to this site especially for them. It will take advantage of the fact that, while many Mexican dishes are time consuming to prepare, many others are not. It will also utilize the many new items that are available in supermarkets that have the ability to drastically reduce the amount of time required for preparation without sacrificing quality or authenticity.
