Huitlacoche or cuitlacoche, as it is sometimes spelled, is a black, mushroom-like fungus that commonly grows on corn. It is used in Mexico as a filling for gorditas, tacos and the like, and more recently as an ingredient in entree sauces. Despite its unappealing description, huitlacoche has a delicious, subtle flavor and a dramatically inky-black color. Like most foods, huitlacoche is best when fresh, however the brand we offer is a great alternative.
